4.12.19 – F – Fiji! I loved both cooking and eating this meal, which came out light, vibrant, and full of flavours.
It also had the happiest Playlist π
Assembled friends: Dorottya with her friend Kati, Idit and Oliver (who bravely came despite having a mild fever), Benrhard & myself.
I totally cheated my way through the starter, by getting Bernhard to make a Guacamole (it’s really close to the Fijian Avocado dip, though) and serving that with shop-bought Tortilla chips. But I believe I made up for this indiscretion with super aromatic Fijian Coconut Fish with Tomato & Spinach on white rice (white rice really does compliment ANY stew / curry type dish! Canβt have enough of it).
For dessert I baked a Fijian Honey Cake with Almonds , which went down beautifully with tea.
