This is my mum’s recipe, one she got from a women’s magazine in 80s Hungary and been making it for every Xmas and Easter as well as random birthdays.
Story has it that it was touted to be healthy for our waist lines; seemingly the low carb fallacy has been doing the rounds for some years! It uses poppy seeds instead of flour which are very high in calcium. It’s not quite gluten free because of the baking powder, but if someone can find a GF version than it would be suitable for those with coeliac disease. What it lacks in starchy carbs, it makes up for in margarine and sugar, so I definitely can’t vouch for any weight loss promotional claims!
Ingredients:
150g ground poppyseeds (can get this in Eastern European shops or use a coffee grinder)
120g ground walnuts (again, food processor will do it)
120g baking margarine
120g caster sugar
4 eggs
1/4 tsp baking powder
Rind of 1 lemon
For the Ganache: 200g dark chocolate, 6 Tbs double cream and sugar to taste
Instructions:
Separate eggs
Beat whites until peaks form
Beat together egg yolks, sugar, and marg
Mix all the dry ingredients together and then combine with egg whites
Carefully combine with the yolk mix
Transfer to lined cake tin
Bake at 150*c until skewer comes out dry
Ganache: Melt chocolate, cream, and sugar in microwave, cover cake when cool.
